Ingredients (serves 4)<br />
1 tablespoon olive oil <br />
1 large brown onion, chopped <br />
2 garlic cloves, crushed <br />
1 head (1.3kg) cauliflower, cut into florets <br />
500g sebago potatoes, peeled, chopped <br />
1 litre chicken stock <br />
1/2 cup pure cream<br />
<br />
<b>Method</b><br />
Heat  oil in a large saucepan over medium-high heat. Add onion and garlic.  Cook, stirring, for 3 minutes or until onion has softened. Add  cauliflower and potato. Cook, stirring, for 5 minutes. <br />
<br />
Add  stock. Season with pepper. Cover. Bring to the boil. Reduce heat to  medium-low. Simmer for 15 to 20 minutes or until potato is tender. Set  aside for 5 minutes to cool slightly. <br />
<br />
Blend, in batches, until  smooth. Return to pan over low heat. Add pure cream. Cook, stirring, for  2 minutes or until heated through. Serve.<br />
<br />
Notes<br />
You could replace chicken stock with beef, vegetable or salt-reduced stock.<br />
Serve soup topped with fresh herbs, chilli flakes, pure cream, sour cream, croutons<br />
Serve soup with crusty bread, bread rolls or pappadums.<br />
To blend soup, use a stick blender, jug blender or food processor.<br />
<br />
Freezer  tip: The soup is suitable to freeze after blending. Freeze flat in a  snap-lock bag or spoon into an airtight container and freeze for up to 3  months. Thaw in a saucepan over medium-high heat. Continue recipe,  adding extra stock if necessary.<br />

Ok here goes - BISMILLAH-<br />
 <br />
- this is an easy dish that you can adjust to suit your taste.<br />
 <br />
This is a large dish and serves around 6 to 8 people and can handle seconds and even thirds<br />
 <br />
8 Green Onions<br />
1 Spainish onion (red onion)<br />
6 cloves garlic<br />
1 pkt Fettuccine Pasta<br />
1 tin 400 grams Tuna (can substitute with chicken)<br />
350 grams Mushrooms<br />
2 300 grams cartons of Sour Cream<br />
1/3 cup Parmesan Cheese<br />
2 cups grated cheddar cheese<br />
1 teaspoon Red Papraika (sweet)<br />
4 tablespoons Olive Oil<br />
A good handful of fresh Basil Leaves (3 teaspoons dried Basil)<br />
A good handful of Parsley leaves chopped<br />
1 tablespoon Maisal Chicken stock powder<br />
Salt and Pepper to taste<br />

<b>Method:</b><br />
 <br />
Boil Fettuccine until jsut cooked, drain and set aside<br />
 <br />
Dice green onion and red onion and saute in olive oil.<br />
 <br />
Chop mushrooms in small bite size pieces and saute.<br />
 <br />
Add  Garlic crushed, Paprika, Chicken Maisal stock powder, Parsley. salt and  pepper, and tinned Tuna (make sure you break the tuna up).<br />
 <br />
Stir so combined then add Basil leaves roughly chopped.Reduce heat to low.<br />
 <br />
Add Sour Cream and Parmesan cheese and turn stove off.<br />
 <br />
Combine the Fettuccini and Tuna and Mushroom Sauce together in large over dish.<br />
 <br />
Put grated cheese on the top and bake in moderate oven for 30 to 35 mins.<br />
 <br />
Cheese on top should be golden brown.<br />
 <br />
Serve and whatch your hubby and family go -  YUMMMMMMMOOOOO MUM. Your the best cook in the WHOOOOOLLLEE WORLD.<br />

Yeah  Right I say to the kids - the proof of how much you like is next time I  ask you to do something - I dont have to scream at you - otherwise no  more tuna and mushroom fettuccini bake =- works most of the time insha  Allah.<br />
 <br />
<b>NOTE: </b>You can add chilli - substitute herbs, or even change it to chicken or other meats, or change the pasta.<br />

250g dried maccheroni pasta (see note) <br />

100g baby spinach leaves <br />
300ml light thickened cream <br />
3/4 cup semi-dried tomatoes <br />
1 1/2 cups grated parmesan cheese <br />
1 cup grated mozzarella cheese<br />
<br />
<b>Method</b><br />
<br />
Preheat oven to 200°C. Lightly grease a 5cm-deep, 20cm x 28cm (base), 8-cup capacity baking dish. <br />
Cook pasta in a large saucepan of boiling, salted water for 10 minutes or until tender. <br />
Meanwhile, remove chicken meat from the bone. Thinly shred meat. Discard bones. <br />
Drain  pasta and return to saucepan. Add chicken, spinach, cream, tomatoes and  1 cup parmesan. Toss until well combined. Season with salt and pepper. <br />
Spoon  mixture into prepared dish. Top with mozzarella and remaining parmesan.  Bake for 20 to 25 minutes or until golden. Spoon pasta bake onto  serving plates. Serve.<br />

<b>Notes</b><br />
Maccheroni is straight tubular pasta. You could use other tubular pastas, such as penne or rigatoni, instead.</div>

<b>Ingredients (serves 4)</b><br />
400g spiral pasta <br />
2 x 185g cans tuna in oil, drained with 1 tablespoon oil reserved <br />
1 small onion, chopped <br />
250g button mushrooms, sliced <br />
1 1/2 cups (375ml) low-fat thickened cream <br />
2 teaspoons wholegrain mustard <br />
1/4 cup chopped flat leaf parsley <br />
salt and cracked black pepper <br />
1 cup grated low-fat tasty cheese<br />
<br />
<b>Method</b><br />
Cook the pasta in a large saucepan according to packet directions or until al dente. Drain and set aside. <br />
Heat  the reserved tuna oil (1 tablespoon) in a deep non-stick frying pan  over medium heat. Add the onion and mushroom and cook for 4-5 minutes or  until softened and slightly browned. Add the cream and simmer for a  further 2-3 minutes. Stir through the cooked pasta, tuna, mustard,  parsley, salt and pepper. Cook for 1-2 minutes or until mixture is  warmed through fully. <br />
Remove from heat and transfer to individual  oven-proof ramekins. Sprinkle each one with some cheese, then place  under a preheated grill and cook until golden brown on top. Set aside  for a few minutes before serving.<br />

<b>Notes</b><br />
We used two 2-cup  capacity ovenproof dishes to serve the pasta bake, but you can use  smaller 1-cup capacity dishes or a large 6-cup capacity dish.<br />

3 thin, long eggplants, trimmed and halved lengthways <br />
690g bottle pasta sauce <br />
150g mozzarella, grated <br />
2 tbs basil leaves, chopped<br />

<b>Method</b><br />
<br />
Preheat oven to 180°C. Grease a 6-cup capacity ovenproof baking dish. Combine ricotta and basil in a bowl. Set aside. <br />
<br />
Cook  pasta in a large saucepan of salted boiling water according to packet  directions or until al dente. Drain well and spoon into baking dish. <br />
<br />
Meanwhile,  heat oil in a large non-stick frying pan over medium-high heat. Cook  eggplant for 3-4 minutes, turning occasionally, until golden brown.  Drain on paper towel and set aside. <br />
<br />
Pour pasta sauce over pasta and  arrange eggplant on top. Place spoonfuls of ricotta mixture on the  eggplant and sprinkle with grated mozzarella. Bake for 20 minutes or  until heated through and cheese is golden brown.<br />

<b>Notes</b><br />
Allow pasta bake to settle for 5 minutes before serving<br />

<b>Ingredients (serves 4)</b><br />
<br />
375g of elbow pasta <br />
175g turkey bacon (or equivalent), thinly sliced <br />
2 garlic cloves, crushed <br />
3 green onions, thinly sliced <br />
75g butter <br />
1/3 cup (50g) plain flour <br />
4 cups milk <br />
1 1/2 cups grated mozzarella cheese <br />
2 tablespoons chopped, fresh flat-leaf parsley <br />
2 tomatoes, thinly sliced <br />
1 1/2 cups coarse, fresh breadcrumbs <br />
1 tablespoon olive oil<br />
<br />
<b>Method</b><br />
Cook  pasta in a large saucepan of boiling, salted water, following packet  directions until tender. Drain. Transfer to a large heatproof bowl. <br />
Preheat  oven to 180ËšC/160ËšC fan-forced. Cook turkey bacon in a large  non-stick saucepan over medium heat for 5 minutes or until golden. Add  garlic and onion. Cook, stirring for 2 minutes or until onion is soft.  Add to pasta. <br />
Melt butter in same pan over medium heat. Add flour.  Cook, stirring for 1 minute or until mixture is bubbling. Gradually stir  in milk until smooth. Cook, stirring constantly for 8 to 10 minutes or  until mixture boils and thickens. Stir in 1/2 cup cheese and parsley.  Add to pasta and bacon mixture. Toss to combine. Season with salt and  pepper. <br />
Spoon mixture into a 12 cup-capacity ovenproof dish. Top  with tomato. Sprinkle with breadcrumbs and remaining cheese. Drizzle  with oil. Bake for 30 to 35 minutes or until top is golden. Stand 2  minutes. Serve.</div>
